Upcycling Fish Byproducts: Transforming Catfish Waste into Functional Foods and Nutraceuticals
Ongoing work in work package 6 on the upcycling of waste nutrients from fish byproducts at CIIMAR.
The outcome is to produce novel foods and nutraceuticals. Innovatively, they are using low-value waste material from fish filleting (catfish heads) aiding the circular economy to produce novel functional foods including protein hydrolysates. Gelatin can yield valuable hydrolysates and peptides by digestion with food-grade enzymes and dried for use in foods, as dietary supplements and sip feeds for patients.
